  • Crock Pot Chili Pork Chops

    1/2 cup chopped onion
    2 tablespoons olive oil
    2-3 garlic cloves
    2 tablespoons Worcestershire sauce
    1/2 cup water
    3/4 cup ketchup
    1 teaspoon chili powder
    5-6 pork chops (bone in preferred)
    salt and pepper

    Directions

    Preheat oven to 325.
    Sear pork chops in olive oil over medium im the dutch oven.  Set aside.
    Cook onions in oil until lightly brown, deglazing pan.
    Add garlic, Worcestershire sauce, chili powder, water, ketchup and salt and pepper.
    Cover and simmer the sauce for 10 minutes.
    Return pork chops to dutch oven and be sure to cover with sauce.

  • Pork and Green Chile Stew

     2 lbs. trimmed pork cubes (I started with about 2 1/2 pounds pork sirloin chops and trimmed off all the fat to make 2 pounds of pork cubes, you could also use pork loin chops.)

    THAI PORK LETTUCE WRAPS
    1 pound ground pork or turkey
    1 small onion, sliced thin, 2 1/2 ounces
    2 tablespoons fresh ginger, grated
    1 clove garlic, minced
    2 cups coleslaw mix with carrots, about 4 ounces
    1 teaspoon sesame oil
    3 tablespoons soy sauce
    2 tablespoons lime juice

  • Pork Stir Fry

    2 tablespoons sesame oil
    1/4 onion, chopped
    2 garlic cloves, minced
    1-1 1/2 lb left-over pork chop
    1 cup stir fry vegetables (I prefer snow peas and carrots, but broccoli would be good too!)

     
    Sauce

    6 tablespoons honey
    1/4 cup soy sauce
    1/4 teaspoon red pepper flakes (more or less depending on heat preference)
    1/4 teaspoon ginger
    2 tablespoons toasted sesame seeds

    Heat 1 tablespoons seame oil over medium heat. Add garlic and onion and sautee until tender.

    1 1/2 lbs boneless pork loin or pork tenderloins
    1/4 cup lemon juice
    1/4 cup olive oil
    4 garlic cloves, smashed
    1 tablespoon dried oregano
    1/4 teaspoon salt
    1/4 teaspoon pepper
    Marinade up to 24 hours.  Broil, 6 inches from element, for about 10 minutes.

  • Feta and Spinach stuffed Pork

    1 Pork Loin 3-4 lbs
    8oz Feta cheese
    8 oz Spinach finely chopped
    2 garlic cloves minced
    2 oz fresh basil minced
    2 0z fresh Thyme
    2 oz fresh Rosemary
    Butcher String

    Preheat oven to 450°
    Butterfly cut the loin lengthwise and cut out a channel in both halves about 1 1/2″ wide and set aside. You can save the meat for another recipe. Pound butterflied loin until flat and thin.

  • Sausage Gravy

    1 (12 ounce) package Jimmy Dean sausage
    3 tablespoons butter
    ¼ cup all-purpose flour
    3 cups milk salt and pepper to taste
    Biscuits
    Crumble and cook sausage in large skillet over medium heat until browned. Melt butter in pan. Stir in flour until dissolved in butter. Gradually stir in milk. Cook gravy until thick and bubbly. Season with salt and pepper. Serve hot over biscuits.
