  • Asparagus and Shiitake Stir-Fry

    To clean the mushrooms, simply wipe the caps with a damp paper towel; do not rinse, as they will become soggy. Toast the sesame seeds in a dry skillet over medium heat until golden.

  • Experiment – Stuffed Portabello Mushrooms

    4 Portabello mushrooms
    6 ounces Louis Rich turkey sausage
    1 medium onion, minced
    1/2 cup bell peppers, chopped fine
    2 garlic cloves, minced
    4 ounces reduced fat cream cheese
    1 egg, beaten
    1 tsp Italian seasoning mix
    1/2 cup bread crumbs
    1/4 cup grated Parmesan cheese
    1/2 tsp pepper
    1/4 tsp salt
    1.  Preheat oven to 400.  Brown turkey sausage with onions and green peppers in a bit of olive oil.  Add garlic and seasoning, and cook until fragrant.

  • Grilled Mushrooms

    Trim Stems.
    Brush with olive oil; season with salt and pepper.  For portobellos, grill, cap side down, covered, over medium until tender, 10 to 15 minutes.  Flip and cook 1 to 2 minutes more.  For button mushrooms, grill over medium high heat until tender, 12 minutes, turning occasionally.
