4 Portabello mushrooms
6 ounces Louis Rich turkey sausage
1 medium onion, minced
1/2 cup bell peppers, chopped fine
2 garlic cloves, minced
4 ounces reduced fat cream cheese
1 egg, beaten
1 tsp Italian seasoning mix
1/2 cup bread crumbs
1/4 cup grated Parmesan cheese
1/2 tsp pepper
1/4 tsp salt
1. Preheat oven to 400. Brown turkey sausage with onions and green peppers in a bit of olive oil. Add garlic and seasoning, and cook until fragrant.
2. Remove off heat and add cream cheese, and bread crumbs.
3. Clean mushrooms. Cut off woody parts of stems, and remove remaining stems carefully. Chop and stir stems into sausage mixture. Add egg.
4. Rub mushrooms with olive oil, stuff and top with Parmesan cheese. Bake 15-18 minutes, or until mushrooms are tender and tops are browned. Enjoy!
Note: Tasted OK, but the mushrooms themselves were rather bland. They definitely need flavor next time, though I would prefer to stick to small mushrooms from now on.
