  • Chicken Wing Dip

    3-4 boneless skinless chicken breasts
    3-4 stalks celery
    2 8 ox blocks of cream cheese
    1 jar Marie Calendar’s Blue Cheese Dressing
    1 small bottle of Crystal’s Hot Sauce
    1-2 cups shredded cheddar cheese
     Boil Chicken Breasts, once cool shred the chicken 
    Saute diced celery, cream cheese, bleu cheese and chicken.  Add hot sauce, (to your liking) 
    Remove and place in baking dish cover w/ shredded cheese bake at 350 degrees for 15-20 mins
    Serve with tortilla chips and celery.

    3/4 cup Jennifer’s Splendid Low Carb Bake Mix (recipe at end of this recipe)
    2 tbs oat flour

    8 fresh jalapeños
    4 ounces cream cheese, softened
    8 slices thin bacon, cut in half crosswise
    Cut the chiles in half lengthwise; scrape out seeds and membranes*. Fill each half with cream cheese, but do not mound it.   • Crispy Green Beans

    16 ounce package frozen whole green beans, do not thaw
    2 tablespoons oil, about
    Salt, to taste
    Line a large baking sheet with heavy foil. Cut open the bag of green beans and pour in the oil. Close the bag and shake to coat the beans completely. Pour out onto the prepared baking sheet.   • Lowcarb Pizza Snack

    I cannot begin to express how yummy this is.  I used full fat mozzarella, beacuse that’s what was available in bulk at my local health food store.  But you can use regular.
    2 ounces mozzarella cheese, shredded (see my comments below)
    Garlic powder
    Italian seasonings
    10 slices pepperoni, about 1/2 ounce
    Other toppings of your choice such as sausage, mushrooms, peppers, etc. *

  • Broiled Tomato Snack

    1 steak tomato
    6 tablespoons prepared pesto sauce
    6 slices lowfat mozzarella cheese

    Directions

    Preheat the oven to Broil.
    Slice the tomato to 6 even slices .
    Top each slice with a tbsp of pesto and a slice of cheese.
    Broil until cheese is melted and eat away.
