  • Roasted Zucchini w/ Thyme

    Prep: 10 minutes
    Total: 40 minutes

    Ingredients
    Serves 4

    3 zucchini (1 1/2 pounds)
    1 onion
    2 tablespoons olive oil
    1 teaspoon dried thyme
    1/2 teaspoon salt
    1/8 teaspoon pepper

    Directions

    Preheat oven to 450 degrees. Quarter and cut zucchini into 1 1/2-inch chunks. Thinly slice onion.
    On a rimmed baking sheet, toss zucchini and onion with oil, thyme, salt, and pepper. Roast 30 minutes, tossing halfway through. Serve.

    4 plum tomatoes, halved
    1/4 cup finely grated Parmesan cheese
    2 tablespoons plain breadcrumbs

  • Fresh tomato and herb no-cook sauce w/ Feta

    1 lb. fresh vine-ripened tomatoes, chopped (about 2 cups chopped tomatoes)
    1/2 cup thinly sliced green onion
    1/4 cup chopped flat-leaf parsley
    1/4 cup chopped or thinly-sliced basil
    2 tsp. finely chopped fresh oregano
    (You could vary the fresh herbs, depending on what you have. The original recipe used dill, which I tried, but I preferred it with basil. Mint also might be good.)
    1/4 cup extra-virgin olive oil (use a good quality olive oil for this recipe)

  • Stuffed Zucchini

    4 zucchini
    1 1/2 chopped cooked chicken or turkey
    1 cup chopped steamed veggies – sweet pepper, eggplant, etc
    1/2 c chopped tomato
    6 tbsp parm
    1 tsp mediterranean seasoning blend
    Slice zucchini in half lengthwise and remove seeds.  Mix chicken, veggies, seasoning and tomato together, then stuff into zucchini “boats.”  Top with parm cheese.  Bake at 350 for 30 minutes.  ???

    Recipe for the microwave 1 minute muffin:
    In a tea cup,
    Melt 1 or 2 tsp of butter
    Mix in 1/4 cup of flaxseed meal (and/or mix with almond meal, protein powder)
    1/4 tsp of baking powder
    1 tsp cinnamon
    1 egg
    Sweetener to taste (i.e., 1-2 packets of Splenda or honey)
    Microwave on high for 1 minute*
    Turn out and let cool
    To make 4 servings baked
    4-8 tsp butter
    1 c flax meal
    2 tsp baking powder
    4 eggs
    4 tsp cinn
    sweetener to taste

  • Kielbasa and Cabbage

    This recipe is almost identical to my Skillet Cabbage except with the addition of caraway seed, red pepper flakes and of course Kielbasa.
    As with my Skillet Cabbage – I will be using a bag of coleslaw.  What can I say, it’s my version of “fast food.”  In the recipe, they suggest the addition of potatoes, but for obvious reasons that won’t be happening.  Perhaps turnip?  Or radishes if I ever get brave enough.
