  • Kielbasa and Cabbage

    This recipe is almost identical to my Skillet Cabbage except with the addition of caraway seed, red pepper flakes and of course Kielbasa.
    As with my Skillet Cabbage – I will be using a bag of coleslaw.  What can I say, it’s my version of “fast food.”  In the recipe, they suggest the addition of potatoes, but for obvious reasons that won’t be happening.  Perhaps turnip?  Or radishes if I ever get brave enough.

  • Skillet Cabbage

    3 slices bacon, chopped
    1/4 cup chopped onion
    1 bag coleslaw mix 
    1 pinch white sugar
    salt and pepper to taste 
    splash  tablespoon vinegar
    1 tsp butter
    Fry bacon until crisp.  Remove bacon and excess grease, and set aside.  Sautee onion until tender, add in coleslaw mix and all remaining ingredients except vinegar.  Utilize bacon grease if more is needed.
    Fry until cabbage is tender-crisp, add bacon.  Remove from heat, splash with vinegar.

  • Thai Pork Lettuce Wraps

    THAI PORK LETTUCE WRAPS
    1 pound ground pork or turkey
    1 small onion, sliced thin, 2 1/2 ounces
    2 tablespoons fresh ginger, grated
    1 clove garlic, minced
    2 cups coleslaw mix with carrots, about 4 ounces
    1 teaspoon sesame oil
    3 tablespoons soy sauce
    2 tablespoons lime juice
    1 tablespoon granular Splenda or equivalent liquid Splenda
    2 teaspoons ground coriander
    1/2 teaspoon crushed red pepper
    8 romaine lettuce leaves, for wraps, 5 ounces total

  • Fiesta Cabbage and Kielbasa

    FIESTA CABBAGE
    1 pound Boar’s Head kielbasa *
    2 tablespoons butter
    4 ounces red onion, diced, 1 medium
    1 green pepper, diced
    2 pounds cabbage, chopped, 1 medium head
    14.5 ounce can diced tomatoes, undrained
    1 teaspoon salt

  • Spicy Asian Cabbage

    SPICY ASIAN CABBAGE
    2 tablespoons oil
    1 medium onion, slivered, 4 ounces
    12 ounces coleslaw mix with carrots, about 6 cups
    1 tablespoon soy sauce
    1 tablespoon oyster sauce
    Dash pepper
    Pinch crushed red pepper
    Heat the oil over medium-high heat in a wok or very large skillet. Sauté the onion for a few minutes until it starts to soften. Add the cabbage and stir-fry until it wilts but still has a little crunch to it. Add the remaining ingredients and toss to mix well.

    1 clove garlic, minced
    1/4 teaspoon xanthan gum, optional
    1/4 cup soy sauce
    1 tablespoon oyster sauce

    4 slices bacon
    1/4 cup butter
    1 tablespoon all-purpose flour
    1 teaspoon salt
    1 large head cabbage, cored and shredded
    1/2 cup sour cream

    Directions
